Among our favorites is the classic Carrot Cake, a timeless delight that brings warmth and comfort to any celebration. Whether you opt for a two-layer cake adorned with luscious cream cheese frosting or whip up some convenient cupcakes for easy snacking, this recipe promises to satisfy every palate.

Ingredients for the Cake:

  • 2 Cups of All-Purpose Flour
  • 2 Cups of Granulated Sugar
  • 2 Teaspoons of Ground Cinnamon
  • 1 Teaspoon of Salt
  • 3 Eggs
  • 2 Cups of Grated Carrots
  • 1 can (7 oz.) of Crushed Pineapple, drained
  • 1 package (7 oz.) of Shredded Coconut
  • 1 Cup of Chopped Pecans

Ingredients for the Frosting:

  • 1/2 Cup of Unsalted Butter
  • 8 oz. Cream Cheese
  • 1 Teaspoon of Vanilla Extract
  • 1 lb.of Powdered Sugar
  • Milk (if needed to adjust frosting consistency)

Directions:

  1. In a large mixing bowl, combine the flour, sugar, cinnamon, salt, eggs, grated carrots, crushed pineapple, shredded coconut, and chopped pecans in the given order. Blend thoroughly.
  2. Gradually add 1 and 1/4 cups of oil to the mixture and continue blending until well      combined.
  3. Pour the batter into well-greased pans. We recommend using two 9-inch springform pans for best results.
  4. Bake in a preheated oven at 350 degrees Fahrenheit for approximately 40 minutes, or until a toothpick inserted into the center comes out clean. For cupcakes, cook for 22 minutes. 
  5. While the cake cools, prepare the frosting by combining the butter, cream cheese, vanilla extract, and powdered sugar in a mixing bowl. Blend until smooth and creamy. Adjust the consistency with milk if necessary.
  6. Once the cakes have cooled completely, generously frost each layer and the sides with the cream cheese frosting.
  7. Slice, serve, and savor the irresistible goodness of your homemade Carrot Cake!
